I made a carbonara from my home-made seitan! This dish is a little bit more fatty than my usual stuff. I cut the seitan in small cubes, and fried it in oil, red wine, liquid smoke, soy sauce, oregano, thyme, rosemary, nutritional yeast, black pepper, white pepper and chives. Then I added a little oat cream to make it creamy. Served with gluten-free pasta! A perfect low fodmap dish!
